Zwanze Day at Monk’s Café

Monk’s will host two ticketed, timed sessions on Saturday, September 25 for the return of our annual Cantillon Zwanze Day event.  Guests will enjoy two flights of eight unique world-class Cantillon lambics, including 2021 Zwanze Parasol and 2020 Zwanze Brettrave. Tickets are $95 each, including service and taxes.  

Session One: 11:30am-1:30pm, September 25  (onsale Thu., Sept. 16; 11am) SESSION ONE IS SOLD OUT 

Session Two:  2:30pm-4:30pm, September 25  (onsale Fri., Sept. 17; 11am) 

Only ticketed guests will be admitted to each Session. Monk’s will re-open to the public at 5pm on September 25.

You may purchase one table of tickets or up to four bar stools. 

Tickets are non-refundable.

There will not be any in-person or online sales – only by phone.

Please be patient and understand that we are a small, low-tech, mom & pop operation.

75 tickets are available for each session. Guests may attend only one session. 

To enter, you will need to show a valid, government issued photo ID along with your CDC Proof of Vaccination or Negative COVID Test result taken within 48 hours of the event.


$95 per ticket, including service and taxes

We are selling tickets by the table, meaning that a two-top will be two tickets; a four-top will be four tickets; a six-top will be six tickets; and barstools will be sold as single tickets or as small groups of up to 4 tickets.

If you have a group of three you must either buy four tickets for a four-top or purchase tickets for three barstools. 


The ticket price includes a plate with small bites for each guest and approximately 34 ounces of Cantillon Lambic

Beer Will Be Served in Two Flights


5 ounces glasses of both Cantillon Zwanze vintages

Cantillon 2020 Zwanze Bettrave – 100 grams of beetroot per liter of Lambic. Intensely red color with traditional Cantillon acidity balanced by the earthiness of the beets. Kegged March 5, 2020. 5.5% abv

Cantillon 2021 Zwanze Parasol – Inspired by Paul Cantillon’s attempt to blend a Lambic with oranges back in the 1950’s. “The result wasn’t exactly spectacular. The refermentation in the bottles was so strong, that the brewery workers at the time were forced to sprint past the cellared bottles to avoid being hit by popping corks and being drenched in Lambic.” So, 70 years later Jean Van Roy decided to try this inspired idea with a more scientific approach. JVR says “the freshness of the oranges in contrast to the bitterness of the zest makes a particularly thirst-quenching Zwanze”. A blend of 80% orange, 15% kumquat, 5% cedar added at 300 grams per liter.

Cantillon Nath – refermented with rhubarb. This was first made as the Zwanze 2008 and perfected with Jean’s Zwanze 2012. The 2012 iteration was Jean’s wife Nathalie’s favorite Lambic. Naturally, Jean started making that on a regular basis starting in 2017 and the Lamibc was named as an homage to his wife. The drawings on the bottle labels were created by Nathalie’s kindergarten school students. A new drawing for each vintage.

Cantillon Camerise – refermented with Haskap Berries, Northern Blue Honeysuckle, Edible Honeysuckle and Honeyberries. Added at 100 kilograms per liter. These were sourced from the provence of Quebec, Canada. 6% abv

Russian River STS Pilsner (Windsor, California)  – Vinnie & Natalie Cilurzo are very close friends of the entire Cantillon/Van Roy family. This well-balanced Pilsner will cut through the acidity of these Lambics. A perfect palate cleanser.  The “STS” is a reference to the Santa Rosa airport code. This is served in a 10 ounce Pilsner glass.



Approximately 4 ounces glasses of each of four Cantillon Lambics

Cantillon Lambic d’Aunis (aka Pinot (sic) d’Aunis and Pineau d’Aunis) – This Lambic debuted in Philadelphia at the Lambic Summit in 2010. This is JVR’s description at that Summit: “and this beer here is a druivenlambic, so it’s a grape lambic. It’s not a Vigneronne, it’s not a Saint Lamvinous. There are a lot of different types of grapes…Olivier Lemasson is a winemaker in the Loire Valley in France. He is a producer of natural wines, so we have exactly the same philosophy…Olivier tried to save a very old type of grape – grapes who have disappeared a bit, a bit like Lambic. It is a very special grape, used only to blend; wines made with Pineau d’Aunis don’t exist or are very rare…a grape which gives some spicy notes, some pepper notes.”  Added at 300 grams per liter. 6.5% abv.

Cantillon Menu Pineau – Another grape sourced from the Loire Valley of France. The Pineau d’Aunis grape is also known as Arbois or Petit Pineau. It has low acidity and is often blended to soften a wine. Added at 300 grams per liter.  6% abv.

Cantillon Magic Lambic  Brewed to raise funds for The Magic Land Theater in Schaerbeek, Belgium. This is a blend of 80% Lou Pepe Framboise and 20% blueberry Lambic. Jean added vanilla to this blend. Very limited production. 5.5%abv

Cantillon Kriek A traditional kriek made by adding organic Turkish Morello sour cherries at the rate of 200 grams per liter. Maceration in stainless steel tanks for about two months. Then blended with young Lambic for a secondary fermentation in the bottles/kegs. 6%abv



Frequently Asked Questions

Is proof of Covid-19 vaccination or a negative test required to attend Zwanze Day? 

We will require a valid, government issued Photo ID along with your CDC Proof of Vaccination or a Negative COVID test result issued less than 48 hours before the event.  No exceptions. 

Will I need to wear a mask to enter? 

We will require you to properly wear a facemask that covers both your nose and mouth whenever you are not seated. Stand Up – Mask Up.

May guests share bottles or visit other tables? 

No bottle shares and no visiting other tables. We ask that you remain seated unless you are heading to the toilet.  Stand Up – Mask Up. There will be no standing or milling around.

Will there be more Cantillon available after the ticketed sessions? 

There will not be any Cantillon Zwanze remaining after these two sessions. Please do not queue up outside in the hopes of purchasing a glass when we open to the public at 5pm. All eight of these Cantillon kegs will have been emptied. We do not want, nor will we permit a group of guests to gather outside. That is for the protection of our coworkers, our guests and our neighbors. 

May I attend both Sessions? I really love Cantillon. 

Guests may only attend one Session, to allow the most people to enjoy these wonderful lambics. 

Our goal is to create the safest possible environment for both our coworkers and our guests. 

Please don’t buy a ticket if you can’t follow these simple rules. You will be escorted out if you do not follow these rules and forfeit your ticket. Your ticket price will not be refunded.
