Monk’s Café is one of a handful of bars in the world to offer these extremely rare (and expensive) lambics. These have been available exclusively at Drie Fonteinen’s Lambik-O-Droom in Beersel, Belgium in the past. We are proud to offer these rarities to our guests. NOTE:   We have an extremely limited supply of each of these special bottlings.Limited to “in-house” enjoyment – meaning our Sidewalk Café & Streetery.

I.i  Nocturne Valavond Nightfall (Please Order as 1.1)                              $75

Bottle Date: 09/20/2017, 8.1%abv   ONLY 4 BOTTLES REMAIN

Speling van het Lot I.i - Nocturne Valavond (Nightfall) is a beer brewed according to the lambic process but with no wheat. Contains 100% malted barley (Pils malt, Pale Ale malt, Cara malt, Chocolate malt); old hops; water, organic honey, and  aged in barrels for more than 30 months. Three bottlings were made according to color; the lightest is Nightfall. It was bottled in 750ml bottles and 936 bottles were produced.

 

I.ii  Nocturne Het Uur Van De Wolf (Please Order as 1.2)                         $75

Speling van het Lot I.ii - Nocturne Het Uur Van De Wolf (The Hour of the Wolf) is a beer brewed according to the lambic process but with no wheat. Contains 100% malted barley (Pils malt, Pale Ale malt, Cara malt, Chocolate malt); old hops; water, organic honey, and aged in barrels for more than 30 months. Three bottlings were made according to color; The Hour of the Wolf is a blend of Nightfall and The Darkest Hour.  It was bottled in 750ml bottles and 1,338 bottles were produced.

 

V.ii Ferme Framboos Blended & Alive (Please Order as 5.2)                     $75

Bottle Date: 09/20/2017, 6.3%abv  9 BOTTLES REMAIN

Speling van het Lot V.ii -Ferme Framboos Blended & Alive is a blend of local whole organic raspberries with one-year-old lambic macerated together for more than nine months. The matured lambic was then backblended with young lambic for a final fruit intensity of 420 grams of raspberries per liter of finished lambic. Some organic honey was added to the blend immediately before blending. The raspberries originate from 100% organic fruit farmer De Ferme Framboos in Huldenberg. It was bottled in 750ml bottles and a total of 1,309 bottles were produced.

 

 

VII.ix  Zotte Kadeeën – Framboos + Braam Blended & Alive (Please Order as 7.9) $75

Speling van het Lot VII.ix - Zotte Kadeeën Framboos + Braam Blended & Alive is a lambic blended with organic raspberries and blackberries in a short maceration of 2.5 months, and bottled in 750ml bottles. Zotte Kadeeën - "Crazy Kids"- refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries. All of the Series VII Speling van het Lot bottles featured lambic fruited in and is blended from freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself.  This particular bottling was limited to 967 bottles.

 

 

VII:x Zotte Kadeeën – Pruim Blended & Alive (Please Order as 7.10)        $75

Speling van het Lot VII.x - Zotte Kadeeën Pruim Blended & Alive is a lambic blended with plums and macerated for one month before being blended with young lambic and is bottled in 750ml bottles. Zotte Kadeeën - "Crazy Kids"- refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries.  All of the Series VII Speling van het Lot bottles featured lambic fruited in and blended from freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. This particular bottling was limited to 964 bottles. 100% 3 Fonteinen lambic.

 

VII.xi Zotte Kadeeën – Cassis Blended & Alive  (Please Order as 7.11)      $75

Speling van het Lot VII.xi - Zotte Kadeeën – Cassis Blended & Alive is a lambic blended with black currants and macerated for five and a half months before being blended with young lambic and is bottled in 750ml bottles. Zotte Kadeeën - "Crazy Kids"- refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries.  All of the Series VII Speling van het Lot bottles featured lambic fruited in and blended from freshly emptied Bordeaux barrels from Château Pabus.  These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. This particular bottling was limited to 1,000 bottles. 100% 3 Fonteinen lambic.

 

VII.xiii  Zotte Kadeeën – Rabarber Blended & Alive (Please Order as 7.13) $75

Speling van het Lot VII.xiii - Zotte Kadeeën – Rabarber Blended & Alive is a lambic blended with rhubarb and macerated for six months before being blended with young lambic and is bottled in 750ml bottles. Zotte Kadeeën - "Crazy Kids"- refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries. All of the Series VII Speling van het Lot bottles featured lambic fruited in and blended from freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. This particular bottling was limited to 788 bottles. 100% 3 Fonteinen lambic.

 

IX.i Aardbeiiteraties: Bio Aardbei Raw & Uncut (Please Order as 9.1)        $75

Speling van het Lot IX.i - Aardbeiiteraties - Bio Aardbei Raw & Uncut is a lambic blended with organic strawberries from Ferme Framboos and macerated in a Chateau Prabus wine barrel. The maceration period was one month before being bottled in 750ml bottles. The final fruit intensity is 366 grams of strawberries per liter of lambic. This particular bottling was limited to 515 bottles.

 

IX.ii Aardbeiiteraties: Aardbei Raw & Uncut (Please Order as 9.2)             $75

Speling van het Lot IX.ii - Aardbeiiteraties - Aardbei Raw & Uncut is a lambic blended with strawberries and macerated in a 2,000 liter Foeder containing young lambic. The maceration period was one month and a half months before 600 liters was bottled in 750ml bottles. The remaining strawberry lambic was used as the basis for a strawberry lambic blended with cherries. The final fruit intensity is 462 grams of strawberries per liter of lambic. This particular bottling was limited to 776 bottles.

 

 

 

IX.iii Aardbeiiteraties: Bio Aardbei + Kriek  (Please Order as 9.3)               $75

Speling van het Lot IX.iii - Aardbeiiteraties - Bio Aardbei + Kriek Raw & Uncut is a blend of two different fruit lambics. A portion of lambic with organic strawberries and lambic with cherries macerated separately in two 400 liter barrels for several weeks. 30% of the strawberry lambic and 70% of the cherry lambic were then put together in another 400 liter barrel and aged for another six months before being bottled in 750ml bottles. The final fruit intensity is 500 grams of fruit per liter of bottled lambic. This particular bottling was limited to 582 bottles.

 

Zenne y Frontera Frontera Batch 5                                                          $75

Bottle Date: 04/11/2018, 7.1%abv

Zenne y Frontera is a unique creation from master-brewer and geuze-blender Armand Debelder and maître-sommelier Andy De Brouwer.

This natural millésime beer is a blend of young lambics that have been aged for another 12 months in 40 year old Oloroso and PX sherry casks. Thanks to the long maturation, the geuze-like notes of our authentic 3 Fonteinen lambic are well accentuated by the typical, fine Oloroso and Pedro Ximénez characteristics. By gently decanting the Zenne y Frontera, the aroma of this unique lambic will evolve from vividly tangy to a complex nutty and fully fruity bouquet.

Batch 5, screen printed bottle. 49th blend of the 2017-2018 season. Beginning of 2017, we acquired a second set of 21 Oloroso and 7 Pedro Ximénez sherry barrels and aged young lambic on them for another year. We lost 4 barrels along the way and we blended 12 barrels for this blend and 12 barrels for batch 6 (blend 50). Average age of over 2.5 years upon release, no backblending. 100% 3 Fonteinen lambic.

 

Zenne y Frontera Batch 6                                                                       $75

Bottle Date: 04/11/2018, 6.9%abv

Zenne y Frontera is a unique creation from master-brewer and geuze-blender Armand Debelder and maître-sommelier Andy De Brouwer. This beer is blended with a similar method as Batch 5.

Batch 6, screen printed bottle. 50th blend of the 2017-2018 season. Beginning of 2017, we acquired a second set of 21 Oloroso and 7 Pedro Ximénez sherry barrels and aged young lambic on them for another year. We lost 4 barrels along the way and we blended 12 barrels for this blend and 12 barrels for batch 5 (blend 49). Average age of over 2.5 years upon release, no backblending. 100% 3 Fonteinen lambic

 

VII:ii Schaarbeekse On a Toast (Medium) Blended & Alive                          $75

Bottle Date 04/04/2018, 6.7%abv  3 BOTTLES REMAIN

Speling van het Lot VIII.ii - Schaarbeekse On a Toast (Medium) Blended & Alive is a lambic blended with Schaarbeekse cherries hand-picked by over 50 families around Brussels and macerated for 265 days in a fresh 1,000 liter charred/toasted barrel before being blended with young lambic and bottled in 750ml bottles. Cherries were added in a proportion of 1 kilogram cherries per 1 liter of lambic. The final fruit intensity is 39.7%. All of the Series VIII Speling van het Lot (Twist of Fate) bottles featured lambic with Schaarbeekse cherries macerated in charred/toasted barrels. This particular bottling was limited to 1,279 bottles. 100% 3 Fonteinen Lambic

 

VII:iii  Schaarbeekse + Framboos On a Toast Blended & Alive                     $75

Speling van het Lot VIII.iii - Schaarbeekse (+Framboos) On a Toast Blended & Alive is a lambic blended with Schaarbeekse cherries hand-picked by over 50 families around Brussels as well as the same proportion of Ferme Framboos raspberries and macerated for 266 days in a fresh 1,000 liter charred/toasted barrel before being blended with young lambic and bottled in 750ml bottles. Cherries and raspberries were added in a proportion of 1 kilogram cherries per 1 liter of lambic. The final fruit intensity is 278 grams of fruit per liter. All of the Series VIII Speling van het Lot (Twist of Fate)  bottles featured lambic with Schaarbeekse cherries macerated in charred/toasted barrels. This particular bottling was limited to 2,431 bottles. 100% 3 Fonteinen Lambic.

 

OUDE GEUZE – 375ml

Oude Geuze Cuvée Armand & Gaston Blend 375 ml     $30

n° 57, season 17/18  • Bottle Date 05/22/18, 6.8%abv

Armand’s homage to his father Gaston. “This particular Oude Geuze has been blended with lambics from 7 different barrels and orginating from 9 different brews. The oldest portion in this blend is a 3.5 year old 3 Fonteinen lamic brewed on the 21st of October 2014. While blending, some local honey was added”

“Nightlights” red label was created by Belgian artist Felix de Boeck. This brewery-aged gem just arrived at Monk’s. The additonal aging makes for a unique tasting experience. The softness and depth a great Geuze (Gueuze) develops over time is always a treat.
